Quiche with millet, tofu and lentils

This delicious cheese pie, rich in protein, fiber and calcium, is a delight that protects against cardiovascular disease and a great way to integrate tofu into your diet, if not already done !

For 4 to 6 people

Ingredients :

The bottom:

  • ¾ cup (180 ml) of millet, cooked
  • ¾ cup (180 ml) of cheese, grated
  • 1 small beaten egg

The filling:

  • 2 tbsp of olive oil
  • 1 dry shallot, chopped
  • 1 clove garlic, finely chopped
  • ½ red pepper, diced
  • ½ orange pepper, diced
  • 1 cup (250 ml) of lentils, cooked
  • 1 zucchini, cubed
  • 1 tsp of curry
  • ½ tsp fennel seeds, ground
  • ½ tsp of coriander, ground
  • ½ tsp of turmeric
  • ¼ cup (60 ml) of cream 15 %
  • ½ regular tofu block of 8 oz (225 g), diced
  • 1 egg, slightly beaten

Gratin:

  • ¾ cup (180 ml) of millet, cooked
  • ¾ cup (180 ml) of cheese, grated
  • ¼ cup (60 ml) of pine nuts

Preparation:

  1. Butter a pie plate and line it with the mixture of millet, cheese and egg, pressing lightly to cover the whole.
  2. In a frying pan, brown the shallot, garlic and peppers in oil for a few minutes without coloring.
  3. Add lentils, zucchini and spices, and cook for 15 minutes, adding broth or water if necessary to ensure that the mixture is well moistened.
  4. Remove from the heat, let cool and add the dices of tofu, cream and beaten egg.
  5. Gently pour this mixture over the mixture of millet, cheese and egg (the bottom of the crust).
  6. Then mix the ingredients of the gratin and spread over the quiche.
  7. Bake at 350 °F (180 °C) for 30 minutes.

TIPS:

Cook the *millet the day before. Do a little more to keep it to add to broths and soups.

*Millet: Millet cooks like rice. When cooking the millet, replace the cooking water with apple juice, its taste will be softer and finer.

Precaution to be taken with millet:

If you are the owner of captive birds, be aware that caged bird food contains millet and you may develop susceptibility to millet dust, exacerbated by the consumption of the cereal itself.
